Healthy Banana Muffins
These healthy banana muffins are made with whole wheat flour, oats, and honey for a nutritious and delicious breakfast or snack.

Ingredients
Dry Ingredients
- 1.5 cup whole wheat flour Can substitute with all-purpose flour
- 1 cup rolled oats Old-fashioned oats work best
- 1 tsp baking soda
- 0.5 tsp baking powder
- 0.25 tsp salt
- 0.5 tsp ground cinnamon Optional
Wet Ingredients
- 3 ripe bananas, mashed The riper, the better!
- 0.5 cup honey Can substitute with maple syrup
- 0.25 cup unsweetened applesauce Adds moisture
- 0.25 cup milk Dairy or non-dairy
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, whisk together the whole wheat flour, rolled oats, baking soda, baking powder, salt, and cinnamon (if using).1.5 cup whole wheat flour, 1 cup rolled oats, 1 tsp baking soda, 0.5 tsp baking powder, 0.25 tsp salt, 0.5 tsp ground cinnamon
- In a medium bowl, mash the ripe bananas. Add the honey, applesauce, milk, egg, and vanilla extract. Stir until well combined.3 ripe bananas, mashed, 0.5 cup honey, 0.25 cup unsweetened applesauce, 0.25 cup milk, 1 large egg
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Fill each muffin cup about 2/3 full.
- Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra flavor, add 1/2 cup of chopped nuts or chocolate chips to the batter.
