Ingredients
  

Dry Ingredients

  • 1.5 cup whole wheat flour Can substitute with all-purpose flour
  • 1 cup rolled oats Old-fashioned oats work best
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.5 tsp ground cinnamon Optional

Wet Ingredients

  • 3 ripe bananas, mashed The riper, the better!
  • 0.5 cup honey Can substitute with maple syrup
  • 0.25 cup unsweetened applesauce Adds moisture
  • 0.25 cup milk Dairy or non-dairy
  • 1 large egg
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  • In a large bowl, whisk together the whole wheat flour, rolled oats, baking soda, baking powder, salt, and cinnamon (if using).

  • In a medium bowl, mash the ripe bananas. Add the honey, applesauce, milk, egg, and vanilla extract. Stir until well combined.

  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Fill each muffin cup about 2/3 full.
  • Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, add 1/2 cup of chopped nuts or chocolate chips to the batter.
