Green Tea, Lemon, and Ginger Chews

Ingredients
Base
- 1 cup water
- 1.5 cup granulated sugar organic cane sugar preferred
- 0.5 cup light corn syrup can substitute with brown rice syrup or agave
- 0.25 cup unsalted butter can substitute with coconut oil
Flavoring
- 2 tablespoons matcha green tea powder high quality culinary grade
- 2 tablespoons lemon zest freshly grated
- 1 tablespoon grated fresh ginger
- 0.25 teaspoon sea salt fine grain
Instructions
- In a medium saucepan, combine water, sugar, corn syrup (or substitute), and butter (or coconut oil).
- Cook over medium heat, stirring constantly until the sugar dissolves. Once dissolved, stop stirring and let the mixture come to a boil.
- Continue cooking until the mixture reaches the hard-crack stage (300-310°F or 149-154°C on a candy thermometer). This will take approximately 15-20 minutes. Monitor closely to prevent burning.
- Remove from heat and quickly whisk in the matcha green tea powder, lemon zest, grated ginger, and sea salt until well combined. Work quickly as the mixture will start to thicken.
- Pour the mixture onto a baking sheet lined with parchment paper. Spread evenly to your desired thickness.
- Let the candy cool completely at room temperature. Once cooled and hardened, cut into small squares or rectangles using a sharp knife or kitchen shears.
- Store the chews in an airtight container at room temperature to maintain freshness.
Notes
For a vegan option, use coconut oil instead of butter. Adjust the amount of ginger to your preference. Chews can be stored for up to 2 weeks in an airtight container.
