Garlic Chicken Fried Rice
A healthy and flavorful garlic chicken fried rice recipe, perfect for a quick and easy weeknight meal. Packed with protein and vegetables.

Ingredients
Chicken
- 1 lb boneless, skinless chicken breasts, cut into small cubes
- 2 cloves garlic, minced
- 1 tbsp soy sauce (low sodium)
Rice
- 3 cups cooked brown rice (day-old, refrigerated)
Vegetables
- 1 cup mixed vegetables (peas, carrots, corn)
- 0.5 cup chopped onion
Other
- 2 tbsp sesame oil
- 0.25 cup chopped green onions, for garnish
Instructions
- In a bowl, combine the cubed chicken with minced garlic and soy sauce. Marinate for at least 10 minutes.1 lb boneless, skinless chicken breasts, cut into small cubes, 2 cloves garlic, minced
- Heat sesame oil in a wok or large skillet over medium-high heat. Add the marinated chicken and cook until fully cooked and lightly browned.0.5 cup chopped onion
- Add chopped onion and mixed vegetables to the wok. Stir-fry for a few minutes until slightly tender.3 cups cooked brown rice (day-old, refrigerated)
- Add the cooked brown rice to the wok. Stir-fry everything together, breaking up any clumps of rice.1 tbsp soy sauce (low sodium)
- Garnish with chopped green onions. Serve hot and enjoy!
Notes
For a spicier version, add a pinch of red pepper flakes.
