Ingredients
  

Chicken

  • 1 lb boneless, skinless chicken breasts, cut into small cubes
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce (low sodium)

Rice

  • 3 cups cooked brown rice (day-old, refrigerated)

Vegetables

  • 1 cup mixed vegetables (peas, carrots, corn)
  • 0.5 cup chopped onion

Other

  • 2 tbsp sesame oil
  • 0.25 cup chopped green onions, for garnish

Instructions
 

  • In a bowl, combine the cubed chicken with minced garlic and soy sauce. Marinate for at least 10 minutes.

  • Heat sesame oil in a wok or large skillet over medium-high heat. Add the marinated chicken and cook until fully cooked and lightly browned.
    0.5 cup chopped onion
  • Add chopped onion and mixed vegetables to the wok. Stir-fry for a few minutes until slightly tender.
    3 cups cooked brown rice (day-old, refrigerated)
  • Add the cooked brown rice to the wok. Stir-fry everything together, breaking up any clumps of rice.
    1 tbsp soy sauce (low sodium)
  • Garnish with chopped green onions. Serve hot and enjoy!

Notes

For a spicier version, add a pinch of red pepper flakes.
