Chocolate Quinoa Puff Energy Balls

- 0.5 cup almond butter Use unsweetened almond butter.
- 0.25 cup cocoa powder Unsweetened cocoa powder
- 0.5 cup puffed quinoa
- 0.25 cup chia seeds
- 1 teaspoon vanilla extract
- sea salt to taste
Instructions
- If the dates are dry, soak them in warm water for 10 minutes to soften them. Drain well.
- In a food processor, combine the dates, almond butter, cocoa powder, chia seeds, vanilla extract, and sea salt. Process until a sticky dough forms.
- Add the puffed quinoa to the food processor and pulse a few times until just combined. Be careful not to over-process, as you want to maintain the quinoa's crunch.
- Roll the mixture into 1-inch balls.
- For a firmer texture, refrigerate the energy balls for at least 30 minutes before serving.
- Enjoy immediately or store in an airtight container in the refrigerator for up to a week.
