Chocolate and Passion Fruit Energy Bars
Delicious and healthy energy bars with the exotic flavors of chocolate and passion fruit.

- 1 8x8 inch baking pan
- 1 Parchment Paper
Ingredients
Dry Ingredients
- 1 cup Rolled Oats
- 0.5 cup Almonds, chopped
- 0.25 cup Unsweetened Cocoa Powder
- 0.25 cup Chia Seeds
Wet Ingredients
- 0.5 cup Dates, pitted
- 0.25 cup Passion Fruit Pulp
- 2 tablespoons Maple Syrup
- 1 teaspoon Vanilla Extract
- Sea Salt to taste
Instructions
- Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a food processor, combine the rolled oats, chopped almonds, cocoa powder, and chia seeds. Pulse until the mixture is coarsely ground.1 cup Rolled Oats, 0.5 cup Almonds, chopped, 0.25 cup Unsweetened Cocoa Powder
- Add the pitted dates, passion fruit pulp, maple syrup, vanilla extract, and sea salt to the food processor. Process until a sticky dough forms.0.25 cup Chia Seeds, 0.5 cup Dates, pitted, 0.25 cup Passion Fruit Pulp, 2 tablespoons Maple Syrup
- Transfer the mixture to the prepared baking pan. Use your hands or a spatula to firmly press the mixture evenly into the pan.
- Cover the pan and refrigerate for at least 2 hours, or preferably overnight, to allow the bars to firm up.
- Once chilled, lift the bars out of the pan using the parchment paper overhang. Cut into 12 equal-sized bars.
- Serve immediately, or store in an airtight container in the refrigerator for up to a week.
Notes
Feel free to add other nuts or seeds to the dry ingredients. You can also substitute honey or agave for maple syrup. For a richer chocolate flavor, add chocolate chips.
