Cauliflower Honey Roasted with Halloumi
A delightful vegetarian dish featuring roasted cauliflower with a sweet honey glaze and salty halloumi cheese.

Ingredients
Cauliflower
- 1 large head cauliflower cut into florets
Halloumi
- 250 g halloumi cheese sliced
Honey Glaze
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 0.5 teaspoon smoked paprika
- salt and pepper to taste
Garnish
- fresh parsley chopped (optional)
Instructions
- Preheat your oven to 200°C (400°F). In a large bowl, toss the cauliflower florets with olive oil, salt, and pepper.
- Spread the cauliflower in a single layer on a baking sheet. Roast for 20 minutes, or until tender and slightly golden.
- While the cauliflower is roasting, prepare the honey glaze. In a small bowl, whisk together honey, olive oil, lemon juice, and smoked paprika.
- Remove the cauliflower from the oven and drizzle with the honey glaze. Toss to coat evenly and return to the oven for another 10 minutes, or until the glaze is caramelized and the cauliflower is tender.
- Add the halloumi slices to the baking sheet with the cauliflower. Roast for the final 5 minutes, until the halloumi is golden brown and slightly softened.
- Remove from the oven and garnish with fresh parsley, if desired. Serve immediately.
