Ingredients
  

Main Ingredients

  • 1 head cauliflower about 4 cups of florets
  • 5 oz spinach baby spinach preferred

Flavor Enhancers

  • 2 cloves garlic freshly minced
  • 0.25 tsp red pepper flakes optional, for a little heat
  • 2 tbsp olive oil extra virgin olive oil
  • Salt and pepper freshly ground black pepper

Instructions
 

  • Wash and cut the cauliflower into small, bite-sized florets.
  • Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using) and sauté for about 30 seconds until fragrant, being careful not to burn the garlic.

  • Add the cauliflower florets to the skillet and cook for about 8-10 minutes, stirring occasionally, until they are tender-crisp and slightly browned.
  • Add the spinach to the skillet and cook until it wilts, about 2-3 minutes. Stir occasionally to ensure even cooking.

  • Season with salt and pepper to taste. Serve immediately.
    0.25 tsp red pepper flakes

Notes

For extra flavor, add a squeeze of lemon juice before serving.
