Ingredients
  

Vegetables

  • 1 medium carrot grated
  • 1 medium zucchini grated, excess moisture squeezed out

Legumes

  • 1 cup cooked chickpeas mashed

Binding & Flavor

  • 0.25 cup all-purpose flour (or gluten-free alternative)
  • 0.25 cup chopped fresh parsley
  • 1 clove garlic minced
  • 1 teaspoon cumin
  • Salt and pepper to taste

Cooking

  • 2 tablespoons olive oil

Instructions
 

  • Grate the carrot and zucchini. Squeeze out excess moisture from the zucchini.

  • In a mixing bowl, combine the grated carrot, zucchini, mashed chickpeas, flour, parsley, garlic, cumin, salt, and pepper.

  • Mix all ingredients thoroughly until well combined.
  • Form the mixture into small patties.

Notes

For a spicier fritter, add a pinch of red pepper flakes.
