Broccoli Quinoa Patties
Healthy and delicious patties made with broccoli, quinoa, and simple seasonings. A great way to sneak in extra veggies!
Equipment
- 1 Large Mixing Bowl
- 1 Baking Sheet
- 1 Parchment Paper For lining the baking sheet
Ingredients
Base
- 1 cup cooked quinoa Rinsed before cooking
- 2 cup broccoli florets Can use a food processor
Binding & Flavor
- 2 eggs Lightly beaten. Can substitute with flax eggs for vegan option.
- 0.5 cup breadcrumbs Whole wheat or gluten-free
- 0.25 cup Parmesan cheese omit for vegan
- 2 cloves garlic Freshly minced
- 1 tsp dried oregano
- 0.5 tsp salt Or to taste
- 0.25 tsp black pepper Freshly ground
Instructions
- Cook quinoa according to package directions. Finely chop broccoli florets.
- In a large mixing bowl, combine cooked quinoa, chopped broccoli, eggs, breadcrumbs, Parmesan cheese (if using), minced garlic, oregano, salt, and pepper. Mix well until all ingredients are evenly distributed.
- Take approximately 1/4 cup of the mixture and form into patties. Place patties on a baking sheet lined with parchment paper.
- Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until golden brown and firm. Flip halfway through.
- Serve hot with your favorite dipping sauce or as a side dish.
Notes
For a vegan option, replace eggs with flax eggs (1 tbsp ground flaxseed + 3 tbsp water per egg). Can also be pan-fried with a little olive oil.
