  • 1 Large Mixing Bowl
  • 1 Baking Sheet
  • 1 Parchment Paper For lining the baking sheet

Ingredients
  

Base

  • 1 cup cooked quinoa Rinsed before cooking
  • 2 cup broccoli florets Can use a food processor

Binding & Flavor

  • 2 eggs Lightly beaten. Can substitute with flax eggs for vegan option.
  • 0.5 cup breadcrumbs Whole wheat or gluten-free
  • 0.25 cup Parmesan cheese omit for vegan
  • 2 cloves garlic Freshly minced
  • 1 tsp dried oregano
  • 0.5 tsp salt Or to taste
  • 0.25 tsp black pepper Freshly ground

Instructions
 

  • Cook quinoa according to package directions. Finely chop broccoli florets.
  • In a large mixing bowl, combine cooked quinoa, chopped broccoli, eggs, breadcrumbs, Parmesan cheese (if using), minced garlic, oregano, salt, and pepper. Mix well until all ingredients are evenly distributed.
  • Take approximately 1/4 cup of the mixture and form into patties. Place patties on a baking sheet lined with parchment paper.
  • Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until golden brown and firm. Flip halfway through.
  • Serve hot with your favorite dipping sauce or as a side dish.

Notes

For a vegan option, replace eggs with flax eggs (1 tbsp ground flaxseed + 3 tbsp water per egg). Can also be pan-fried with a little olive oil.
