Ingredients
  

Patties

  • 1 cup cooked quinoa Cooked and cooled
  • 1 cup broccoli florets Fresh or frozen, finely chopped
  • 0.5 cup grated Parmesan cheese Optional, can be replaced with nutritional yeast for vegan option
  • 0.25 cup breadcrumbs Panko or regular
  • 1 large egg Can be replaced with flax egg for vegan option
  • 2 cloves garlic Freshly minced
  • 1 tbsp olive oil Extra virgin olive oil
  • 0.5 tsp salt To taste
  • 0.25 tsp black pepper Freshly ground

Instructions
 

  • Cook the quinoa according to package directions. Finely chop the broccoli florets. Mince the garlic.
  • In a large bowl, combine the cooked quinoa, chopped broccoli, Parmesan cheese (if using), breadcrumbs, egg (or flax egg), minced garlic, olive oil, salt, and pepper. Mix well until all ingredients are evenly distributed.
  • Shape the mixture into patties, about 1/2 inch thick and 3 inches in diameter.
  • Heat a skillet over medium heat. Cook the patties for about 5-7 minutes per side, or until golden brown and heated through.
  • Serve the broccoli quinoa patties warm. Enjoy!

Notes

For a vegan option, replace the egg with a flax egg (1 tbsp ground flaxseed meal mixed with 3 tbsp water, let sit for 5 minutes) and the Parmesan cheese with nutritional yeast.
