Ingredients
  

Dry Ingredients

  • 3 cup all-purpose flour Or gluten-free blend
  • 1 tbsp baking powder
  • 1 tsp salt

Wet Ingredients

  • 1.5 cup milk or plant-based milk
  • 0.5 cup olive oil
  • 2 eggs lightly beaten

Broccoli

  • 2 cup broccoli florets finely chopped

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a large mixing bowl, whisk together the flour, baking powder, and salt.

  • In a separate bowl, combine the milk, olive oil, and eggs.

  • Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.

  • Fold in the chopped broccoli florets.
    0.5 cup olive oil
  • Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve.

Notes

For a cheesy flavor, add 1/2 cup of shredded cheddar cheese to the batter.
