Broccoli Bread
A healthy and delicious bread made with fresh broccoli, perfect for sandwiches or toast.

- 1 9x5 inch loaf pan

Ingredients
Dry Ingredients
- 3 cup all-purpose flour Or gluten-free blend
- 1 tbsp baking powder
- 1 tsp salt
Wet Ingredients
- 1.5 cup milk or plant-based milk
- 0.5 cup olive oil
- 2 eggs lightly beaten
Broccoli
- 2 cup broccoli florets finely chopped
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large mixing bowl, whisk together the flour, baking powder, and salt.3 cup all-purpose flour, 1 tbsp baking powder
- In a separate bowl, combine the milk, olive oil, and eggs.1 tsp salt, 1.5 cup milk
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.3 cup all-purpose flour, 1 tbsp baking powder, 1 tsp salt, 1.5 cup milk
- Fold in the chopped broccoli florets.0.5 cup olive oil
- Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve.
Notes
For a cheesy flavor, add 1/2 cup of shredded cheddar cheese to the batter.
