Ingredients
  

Base

  • 1 cup cottage cheese low-fat
  • 4 eggs large

Vegetables

  • 0.5 cup chopped spinach
  • 0.25 cup chopped red bell pepper
  • 0.25 cup chopped onion

Seasoning

  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease an 8x8 inch baking dish.
  • In a mixing bowl, combine cottage cheese, eggs, spinach, red bell pepper, onion, salt, and pepper. Whisk until well combined.
  • Pour the mixture into the prepared baking dish. Bake for 25-30 minutes, or until the eggs are set and the top is lightly golden.

Notes

Feel free to add other vegetables like mushrooms or zucchini. You can also add cheese on top for extra flavor.
