Pesto Beans
A simple and flavorful side dish featuring green beans tossed in homemade or store-bought pesto.

- 1 pound fresh green beans trimmed
- 0.5 cup prepared pesto homemade or store-bought
- 2 tablespoons olive oil
- 2 cloves garlic minced
- Salt and pepper to taste
- pine nuts or grated Parmesan cheese for garnish
Instructions
- Wash and trim the green beans. Cut them into smaller, bite-sized pieces if desired.
- Bring a large pot of salted water to a boil. Add the green beans and blanch for 3-5 minutes, until they are bright green and slightly tender-crisp. Drain the beans in a colander and immediately rinse with cold water to stop the cooking process.
- In a large bowl, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds, until fragrant. Be careful not to burn the garlic.
- Add the blanched green beans to the bowl with the garlic-infused oil. Stir in the pesto, salt, and pepper. Toss to coat the beans evenly.
- Serve the pesto beans immediately. Garnish with pine nuts or grated Parmesan cheese, if desired.
