Zucchini

  • 2 zucchini Medium size
  • 0.5 cup panko breadcrumbs For crispy coating
  • 0.25 cup nutritional yeast For cheesy flavor
  • 1 teaspoon garlic powder For flavor
  • 0.5 teaspoon onion powder For flavor
  • 0.25 teaspoon salt To taste
  • 0.25 teaspoon black pepper To taste
  • 2 tablespoons olive oil For drizzling

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Slice the zucchini into 1/4-inch thick rounds.
  • In a large bowl, combine the panko breadcrumbs, nutritional yeast, garlic powder, onion powder, salt, and pepper. Mix well.

  • Drizzle the zucchini slices with olive oil. One at a time, dredge each zucchini slice in the breadcrumb mixture, pressing gently to ensure the mixture adheres.

  • Arrange the coated zucchini slices in a single layer on the prepared baking sheet. Bake for 18-20 minutes, flipping halfway through, until golden brown and crispy.

Notes

For extra crispiness, you can broil the zucchini slices for the last 1-2 minutes of baking, keeping a close eye to prevent burning.
