Lemon and Cottage Cheese Mousse

Ingredients
Base
- 1 cup low-fat cottage cheese drained if watery
- 0.25 cup lemon juice freshly squeezed
- 0.25 cup honey or maple syrup adjust to taste
- 1 teaspoon lemon zest freshly grated
- 0.5 teaspoon vanilla extract
Optional Toppings
- Fresh berries strawberries, blueberries, raspberries
- Lemon slices for garnish
- Chopped nuts almonds, pistachios
Instructions
- In a blender or food processor, combine the cottage cheese, lemon juice, honey (or maple syrup), lemon zest, and vanilla extract.
- Blend until the mixture is smooth and creamy. You may need to scrape down the sides of the blender a few times to ensure everything is well combined.
- Taste the mousse and adjust the sweetness or lemon flavor as needed, by adding more honey or lemon juice.
- Pour the mousse into serving glasses and refrigerate for at least 30 minutes to allow it to set slightly.
- Before serving, garnish with fresh berries, lemon slices, or chopped nuts, if desired.
Notes
For a smoother texture, use a high-speed blender. You can also strain the cottage cheese through a fine-mesh sieve before blending to remove excess liquid.
