Dry Ingredients

  • 1 cup Mixed Seeds Sunflower, pumpkin, sesame, flax
  • 0.5 cup Rolled Oats
  • 0.25 cup Shredded Coconut Unsweetened
  • 0.25 cup Chopped Nuts Almonds, walnuts
  • 0.25 cup Dark Chocolate Chips 70% cacao or higher

Wet Ingredients

  • 0.25 cup Honey or Maple Syrup
  • 2 tablespoons Coconut Oil Melted
  • 1 teaspoon Vanilla Extract
  • Sea Salt Pinch

Instructions
 

  • Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine mixed seeds, rolled oats, shredded coconut, chopped nuts, and dark chocolate chips.

  • In a saucepan or microwave-safe bowl, melt coconut oil. Stir in honey (or maple syrup) and vanilla extract. Add a pinch of sea salt.
    0.25 cup Honey or Maple Syrup, 2 tablespoons Coconut Oil, 1 teaspoon Vanilla Extract
  • Pour the wet ingredients over the dry ingredients. Mix well until everything is evenly coated.
  • Transfer the mixture to the prepared baking sheet. Press firmly and evenly to create a compact layer.
  • Bake for 20-25 minutes, or until lightly golden brown around the edges.
  • Remove from the oven and let cool completely on the baking sheet. Once cooled, cut into bars.

Notes

Store in an airtight container at room temperature for up to a week, or in the refrigerator for longer storage.
