Equipment

  • 1 Food Processor
  • 1 9-inch Pie Pan
  • 1 Mixing Bowl

Ingredients

Crust

  • 1 cup raw almonds
  • 0.5 cup pitted dates
  • 0.25 cup shredded coconut
  • 1 tbsp chia seeds
  • 0.25 tsp sea salt

Filling

  • 3 cup fresh blueberries
  • 0.25 cup chia seeds
  • 0.25 cup maple syrup or agave nectar
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp vanilla extract

Instructions

  • In a food processor, combine the almonds, dates, shredded coconut, chia seeds, and sea salt. Process until the mixture is finely ground and starts to stick together.
  • Press the crust mixture evenly into the bottom of a 9-inch pie pan. Set aside.
  • In a large mixing bowl, combine the blueberries, chia seeds, maple syrup, lemon juice, and vanilla extract.
  • Stir well to combine and let sit for about 15-20 minutes, allowing the chia seeds to absorb some of the liquid and thicken the mixture.
  • Pour the blueberry mixture into the prepared crust.
  • Spread evenly and gently press down.
  • Cover the pie with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the filling to set completely.
  • Once the pie is set, slice and serve chilled. Enjoy!

Notes

For a smoother crust, soak the almonds in water for at least 2 hours before using. You can adjust the sweetness by adding more or less maple syrup. Feel free to add other berries like raspberries or strawberries to the filling.
