No-Bake Blueberry and Chia Seed Pie
A healthy and delicious no-bake pie packed with antioxidants and fiber, perfect for a guilt-free treat.

Ingredients
Crust
- 1 cup raw almonds
- 0.5 cup pitted dates
- 0.25 cup shredded coconut
- 1 tbsp chia seeds
- 0.25 tsp sea salt
Filling
- 3 cup fresh blueberries
- 0.25 cup chia seeds
- 0.25 cup maple syrup or agave nectar
- 2 tbsp lemon juice freshly squeezed
- 1 tsp vanilla extract
Instructions
- In a food processor, combine the almonds, dates, shredded coconut, chia seeds, and sea salt. Process until the mixture is finely ground and starts to stick together.
- Press the crust mixture evenly into the bottom of a 9-inch pie pan. Set aside.
- In a large mixing bowl, combine the blueberries, chia seeds, maple syrup, lemon juice, and vanilla extract.
- Stir well to combine and let sit for about 15-20 minutes, allowing the chia seeds to absorb some of the liquid and thicken the mixture.
- Pour the blueberry mixture into the prepared crust.
- Spread evenly and gently press down.
- Cover the pie with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the filling to set completely.
- Once the pie is set, slice and serve chilled. Enjoy!
Notes
For a smoother crust, soak the almonds in water for at least 2 hours before using. You can adjust the sweetness by adding more or less maple syrup. Feel free to add other berries like raspberries or strawberries to the filling.
