Ingredients
  

Burger Patty

  • 1 cup cooked quinoa rinsed well
  • 15 ounce black beans rinsed and drained
  • 0.5 cup finely chopped onion yellow or white
  • 0.5 cup finely chopped bell pepper any color
  • 0.25 cup chopped cilantro fresh
  • 1 tablespoon chili powder adjust to taste
  • 1 teaspoon cumin ground
  • 0.5 teaspoon garlic powder optional
  • Salt and pepper to taste
  • 0.25 cup breadcrumbs optional, for binding

Instructions
 

  • Rinse and drain the black beans. Finely chop the onion and bell pepper. Chop the cilantro.
  • In a large bowl, combine the cooked quinoa, black beans, onion, bell pepper, cilantro, chili powder, cumin, garlic powder, salt, pepper, and breadcrumbs (if using).
  • Mash the black beans slightly with a fork or potato masher to help the mixture bind together. Mix all ingredients until well combined.
  • Form the mixture into 4 equal-sized patties.
  • Heat a large skillet over medium heat. Add a little oil to the skillet. Cook the patties for about 5-7 minutes per side, or until golden brown and heated through.
  • Serve the veggie burgers on buns with your favorite toppings, such as lettuce, tomato, avocado, and salsa.

Notes

For a spicier burger, add a pinch of cayenne pepper to the mixture.
