Cranberry Pistachio Energy Balls

- 1 cup Medjool Dates pitted
- 0.5 cup Pistachios shelled
- 0.5 cup Dried Cranberries
- 0.25 cup Shredded Coconut unsweetened
- 1 tbsp Chia Seeds
- 0.25 tsp Sea Salt
Instructions
- Place the pitted dates in a food processor and process until a paste forms. This may take a minute or two, and you may need to scrape down the sides of the bowl a few times.
- Add the pistachios, dried cranberries, shredded coconut, chia seeds, and sea salt to the food processor. Pulse until the mixture is well combined and slightly sticky.
- Transfer the mixture to a bowl. Roll the mixture into 12 equal-sized balls.
- Enjoy immediately or store in an airtight container in the refrigerator for up to a week.
Notes
For a smoother texture, soak the dates in warm water for 10 minutes before processing. You can substitute other nuts or dried fruits based on your preferences.
