Carrot Zucchini Chickpea Fritters
These delicious and healthy fritters are packed with vegetables and plant-based protein, making them a perfect snack or light meal.

Ingredients
Vegetables
- 1 medium carrot grated
- 1 medium zucchini grated, excess moisture squeezed out
Legumes
- 1 cup cooked chickpeas mashed
Binding & Flavor
- 0.25 cup all-purpose flour (or gluten-free alternative)
- 0.25 cup chopped fresh parsley
- 1 clove garlic minced
- 1 teaspoon cumin
- Salt and pepper to taste
Cooking
- 2 tablespoons olive oil
Instructions
- Grate the carrot and zucchini. Squeeze out excess moisture from the zucchini.1 medium carrot

- Mix all ingredients thoroughly until well combined.
- Form the mixture into small patties.

Notes
For a spicier fritter, add a pinch of red pepper flakes.
