Peanut Butter Energy Balls

Ingredients
Base Ingredients
- 1 cup rolled oats Use gluten-free if needed
- 0.5 cup peanut butter Natural, unsweetened
- 0.25 cup honey Or maple syrup
- 1 teaspoon vanilla extract Pure vanilla extract
Optional Add-ins
- 0.25 cup chocolate chips Dark chocolate
- 0.25 cup shredded coconut Unsweetened
- 2 tablespoons chia seeds For added nutrients
Instructions
- In a medium bowl, combine the rolled oats, peanut butter, honey, and vanilla extract. Mix well until all ingredients are thoroughly combined.
- If desired, add chocolate chips, shredded coconut, and chia seeds. Stir to distribute evenly.
- Roll the mixture into 1-inch balls. Place the energy balls on a parchment-lined plate or baking sheet.
- Refrigerate the energy balls for at least 30 minutes to allow them to firm up.
