Spicy Turmeric Ginger Sinus Relief Soup

Ingredients
Base
- 1 tbsp olive oil
- 1 medium yellow onion chopped
- 2 cloves garlic minced
- 1 inch ginger grated
Spices & Broth
- 1 tsp turmeric powder
- 0.5 tsp red pepper flakes adjust to taste
- 0.5 tsp black pepper
- 6 cups vegetable broth low sodium
Vegetables & Protein
- 1 cup chopped carrots
- 1 cup chopped celery
- 15 oz chickpeas drained and rinsed
- 1 cup chopped kale
Finishing Touches
- 2 tbsp lemon juice freshly squeezed
- 1 taste Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and grated ginger and cook for another minute until fragrant.
- Stir in the turmeric powder, red pepper flakes, and black pepper. Cook for 30 seconds, allowing the spices to bloom. Pour in the vegetable broth and bring to a simmer.
- Add the chopped carrots and celery to the pot. Simmer for 15 minutes, or until the vegetables are tender.
- Stir in the drained and rinsed chickpeas and chopped kale. Cook for another 5 minutes, or until the kale is wilted and the chickpeas are heated through.
- Stir in the lemon juice. Season with salt and pepper to taste. Serve hot and enjoy the sinus-clearing benefits!
Notes
For an extra boost, add a pinch of cayenne pepper. Adjust the amount of red pepper flakes to your spice preference. Store leftovers in the refrigerator for up to 3 days.
