Base
- 1 cup cottage cheese low-fat
- 4 eggs large
Vegetables
- 0.5 cup chopped spinach
- 0.25 cup chopped red bell pepper
- 0.25 cup chopped onion
Seasoning
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C). Lightly grease an 8x8 inch baking dish.
- In a mixing bowl, combine cottage cheese, eggs, spinach, red bell pepper, onion, salt, and pepper. Whisk until well combined.
- Pour the mixture into the prepared baking dish. Bake for 25-30 minutes, or until the eggs are set and the top is lightly golden.
