Ingredients
  

Dry Ingredients

  • 1 cup Rolled Oats
  • 0.5 cup Almonds, chopped
  • 0.25 cup Unsweetened Cocoa Powder
  • 0.25 cup Chia Seeds

Wet Ingredients

  • 0.5 cup Dates, pitted
  • 0.25 cup Passion Fruit Pulp
  • 2 tablespoons Maple Syrup
  • 1 teaspoon Vanilla Extract
  • Sea Salt to taste

Instructions
 

  • Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  • In a food processor, combine the rolled oats, chopped almonds, cocoa powder, and chia seeds. Pulse until the mixture is coarsely ground.

  • Add the pitted dates, passion fruit pulp, maple syrup, vanilla extract, and sea salt to the food processor. Process until a sticky dough forms.

  • Transfer the mixture to the prepared baking pan. Use your hands or a spatula to firmly press the mixture evenly into the pan.
  • Cover the pan and refrigerate for at least 2 hours, or preferably overnight, to allow the bars to firm up.
  • Once chilled, lift the bars out of the pan using the parchment paper overhang. Cut into 12 equal-sized bars.
  • Serve immediately, or store in an airtight container in the refrigerator for up to a week.

Notes

Feel free to add other nuts or seeds to the dry ingredients. You can also substitute honey or agave for maple syrup. For a richer chocolate flavor, add chocolate chips.
