Ingredients
  

Vegetables

  • 1 large broccoli florets cut into florets
  • 2 medium carrots peeled and sliced
  • 1 red bell pepper seeded and chopped
  • 1 zucchini chopped
  • 1 yellow squash chopped
  • 1 red onion thinly sliced

Sauce

  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup vegetable broth

Instructions
 

  • Preheat oven to 375°F (190°C). Wash and chop all vegetables into bite-sized pieces. Place them in a large mixing bowl.
  • In a small bowl, whisk together olive oil, minced garlic, dried oregano, salt, black pepper, and vegetable broth.
  • Pour the sauce over the vegetables in the mixing bowl and toss to coat evenly.
  • Transfer the vegetable mixture to a baking dish. Bake for 45 minutes, or until vegetables are tender and slightly browned.
  • Let cool slightly before serving. Enjoy!

Notes

For a richer flavor, consider adding a sprinkle of parmesan cheese during the last 10 minutes of baking. Store leftovers in an airtight container in the refrigerator for up to 3 days.
