Banana Bread Baked Oats
A healthy and delicious twist on banana bread in baked oatmeal form, perfect for a comforting and nutritious breakfast.

Ingredients
Dry Ingredients
- 1 cup rolled oats gluten-free if needed
- 1 tsp baking powder
- 0.5 tsp cinnamon ground
- 0.25 tsp salt
Wet Ingredients
- 1 ripe banana, mashed
- 1 cup milk dairy or non-dairy
- 1 large egg or flax egg for vegan
- 2 tbsp maple syrup or honey
- 1 tsp vanilla extract
Optional Toppings
- 0.25 cup chopped walnuts
- 0.25 cup chocolate chips dairy-free if needed
Instructions
- Preheat oven to 375°F (190°C). Grease an 8x8 inch baking dish.
- In a mixing bowl, combine rolled oats, baking powder, cinnamon, and salt.
- In the same bowl, add mashed banana, milk, egg (or flax egg), maple syrup, and vanilla extract. Mix well until combined.
- Stir in chopped walnuts and/or chocolate chips, if desired.
- Pour the mixture into the prepared baking dish and spread evenly. Bake for 25-30 minutes, or until golden brown and set.
- Let cool slightly before serving. Enjoy warm!
Notes
For a vegan option, use a flax egg and non-dairy milk. You can also add other fruits like blueberries or cranberries.
