Ingredients
  

Dry Ingredients

  • 1 cup rolled oats gluten-free if needed
  • 1 tsp baking powder
  • 0.5 tsp cinnamon ground
  • 0.25 tsp salt

Wet Ingredients

  • 1 ripe banana, mashed
  • 1 cup milk dairy or non-dairy
  • 1 large egg or flax egg for vegan
  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla extract

Optional Toppings

  • 0.25 cup chopped walnuts
  • 0.25 cup chocolate chips dairy-free if needed

Instructions
 

  • Preheat oven to 375°F (190°C). Grease an 8x8 inch baking dish.
  • In a mixing bowl, combine rolled oats, baking powder, cinnamon, and salt.
  • In the same bowl, add mashed banana, milk, egg (or flax egg), maple syrup, and vanilla extract. Mix well until combined.
  • Stir in chopped walnuts and/or chocolate chips, if desired.
  • Pour the mixture into the prepared baking dish and spread evenly. Bake for 25-30 minutes, or until golden brown and set.
  • Let cool slightly before serving. Enjoy warm!

Notes

For a vegan option, use a flax egg and non-dairy milk. You can also add other fruits like blueberries or cranberries.
