Instructions
- Preheat oven to 375°F (190°C). Grate the zucchini and place it in a clean kitchen towel or cheesecloth. Squeeze out as much excess moisture as possible. This step is crucial to prevent soggy bites.
- In a mixing bowl, combine the squeezed zucchini, minced garlic, Parmesan cheese (if using), whole wheat flour, egg (or flax egg), olive oil, oregano, salt, and pepper. Mix well until all ingredients are thoroughly combined.
- Take a tablespoon of the mixture and form small bite-sized balls or flatten them slightly into patties. Place them on a baking sheet lined with parchment paper.
