Ingredients
  

Dry Ingredients

  • 1.5 cup whole wheat flour Can substitute with all-purpose flour if needed
  • 1 tsp baking soda
  • 0.5 tsp ground cinnamon
  • 0.25 tsp salt

Wet Ingredients

  • 3 ripe bananas, mashed The riper the better!
  • 0.33 cup maple syrup Can substitute with honey
  • 0.25 cup coconut oil, melted Can substitute with olive oil
  • 1 large egg
  • 1 tsp vanilla extract

Optional

  • 0.5 cup chopped walnuts

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  • In a large bowl, whisk together the whole wheat flour, baking soda, cinnamon, and salt.

  • In a separate bowl, mash the bananas. Add the maple syrup, melted coconut oil, egg, and vanilla extract. Mix well.

  • Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  • Fold in the chopped walnuts.

  • Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Slice and enjoy!

Notes

For a richer flavor, use brown butter instead of coconut oil. Store in an airtight container at room temperature for up to 3 days.
