Ingredients

  • 1 head Cauliflower cut into florets
  • 5 oz Spinach
  • 2 cloves Garlic minced
  • 0.25 cup Onion chopped

Pantry

  • 2 tablespoons Olive Oil
  • 0.25 teaspoon Red Pepper Flakes optional
  • Salt and Pepper to taste

Instructions
 

  • Wash and cut the cauliflower into small, bite-sized florets.
  • Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic and sauté for 2-3 minutes, until fragrant.
  • Add the cauliflower florets to the skillet and cook for 8-10 minutes, stirring occasionally, until slightly tender.
  • Add the fresh spinach to the skillet. Cook for 2-3 minutes, or until the spinach wilts.
  • Season with salt, pepper, and red pepper flakes (if using). Stir well to combine. Serve hot.

Notes

For added flavor, you can add a squeeze of lemon juice before serving.
