Healthy Homemade Mayonnaise
A creamy, wholesome homemade mayonnaise made with clean ingredients—perfect for spreading, dipping, or mixing into dressings without the additives of store-bought versions.
Ingredients
- - 1 large egg room temperature
- - 1 tbsp lemon juice or apple cider vinegar
- - 1/2 tsp Dijon mustard
- - 1/4 tsp sea salt
- - 1 cup light olive oil or avocado oil
- - Optional: pinch of garlic powder or turmeric for flavor and color
Instructions
- Add Base Ingredients
- In a tall jar or cup (if using an immersion blender), add the egg, lemon juice/vinegar, mustard, and salt.
- Blend with Oil
- Pour in the oil. Place an immersion blender at the bottom of the jar and turn it on. Keep it at the bottom until the mixture begins to emulsify (turn thick and creamy), then slowly lift to blend the rest.
- Adjust Seasoning
- Taste and adjust salt or add garlic powder/turmeric if desired.
- Store
- Transfer to a sealed jar and refrigerate. Use within 5–7 days.
