Healthy Seed and Chocolate Bar

Ingredients
Seeds
- 0.5 cup pumpkin seeds raw, unsalted
- 0.25 cup sunflower seeds raw, unsalted
- 0.25 cup sesame seeds
- 2 tablespoons chia seeds
Chocolate & Binder
- 0.5 cup dark chocolate chips 70% cacao or higher
- 0.25 cup honey or maple syrup for vegan option
- 0.25 teaspoon vanilla extract optional
Instructions
- Preheat oven to 350°F (175°C). Spread pumpkin, sunflower, and sesame seeds on a baking sheet. Toast for 5-7 minutes, or until lightly golden. Let cool.
- In a saucepan over low heat, melt dark chocolate chips and honey (or maple syrup). Stir continuously until smooth. Remove from heat and stir in vanilla extract (if using).
- In a mixing bowl, combine toasted seeds, chia seeds, and melted chocolate mixture. Mix well until all seeds are evenly coated.
- Line a baking sheet with parchment paper. Pour the seed and chocolate mixture onto the parchment paper and spread evenly into a thin layer (about 1/2 inch thick).
- Refrigerate for at least 30 minutes, or until firm. Once firm, cut into bars.
Notes
Store in an airtight container in the refrigerator for up to a week.
